Honeyed Protein Balls - Low Fruit

These protein balls are lower in sugar as they have a nut butter rather than date base. Great to make in a large batch so that you always have some for those snacky moments.
I always have a stash in my freezer. Enjoy!

MAKES

30 Balls

INGREDIENTS

1/2 cup nut butter of your choice (cashew or peanut)

1/4 cup Jarrah Honey

1 tsp vanilla

1 tsp ground cinnamon

1/2 cup rice bubbles

1 cup rolled oats

1 cup shredded coconut

1/4 cup ground flax seed

1/2 cup sultanas

Coconut oil (as required)


METHOD

Step one.
In a large bowl, mix together the nut butter, honey, vanilla and cinnamon. Blend with a rubber spatula until smooth.

Step two.
Add the remaining ingredients. Mix to combine. Add coconut oil to get required consistency - will be required if you are using a natural and more dry nut butter.

Step three.
Place in the fridge to cool for about 30minutes (optional - but does help to bind more easily).
When ready, scoop and roll teaspoon sized balls.

Step four.
Enjoy! These will stay delicious in an air tight container in the fridge or freezer. I personally keep them in the freezer as they defrost quickly.
