Toasted Honey Granola with Fruit Compote

We love toasted granola but hate that any options on the supermarket shelves are full of sugar! Enter Toasted Honey Granola. Enjoy this guilt-free brekkie everyday.

MAKES

1 Large Jar

INGREDIENTS

500g oats

100g shredded coconut

100g seeds (we like pepitas, sunflower seeds and flax seeds)

50g dried fruit like sultanas

100g honey

150g light olive oil (or coconut oil)

FRUIT COMPOTE

2 cups of fresh or frozen fruit (we love rhubarb or strawberries)

1 Tb honey

squeeze of citrus (lemon, orange or lime)

 

METHOD

Step one.

Preheat the oven to 200°C and prepare two oven trays with greaseproof paper.

Step two.

Simply mix all the ingredients together in a bowl. Using your hands is the easiest way!

Step three.

Place half of the mixture on each tray, in an even single layer.

Step four.

Pop both trays in the oven for 20 minutes to get lovely and toasted, setting your timer at the half way point to turn the mixture.

Step five.

While your granola is toasting put all your compote ingredients together in a pot over medium heat. Simmer for 5-10minutes until the fruit begins to soften.

Step six.

That's it! Serve the compote warm or keep it in the fridge to enjoy with your granola every day.
