Bee Pollen Bliss Balls - Raw

Quick, healthy and perfect pick me up when you are on the go. Such fun for kids to make and eat as well.

INGREDIENTS

200g organic Medjool dates, pitted

3 tbsp cashew butter

2 tbsp organic coconut oil

3 tbsp coconut flour

1 tsp vanilla bean paste

2 tbsp Jarrah honey

1/2 cup Bee Pollen for rolling

 

METHOD

Step one.
Boil your kettle. Add the pitted dates to a narrow container (the type that comes with a stick blender) and cover with the freshly boiled water. Leave for 10mins.

Step two.
Meanwhile, add the rest of your ingredients to a bowl and mix to combine. Add in the drained dates once the 10minute soak is complete and the mixture will come together as a thick mass.

Step three.
Pour the bee pollen onto a plate. Scoop 1 tsp of mixture into your hands, roll and then roll into the plate of bee pollen until covered. Continue until all the mixture is used.

Step four.
Enjoy! Keep any leftovers in the fridge. These are a great toddler snack or an healthy on-the-go treat.
