Flourless Florentines

Perfect for Chinese New Year celebrations, or for any day when you want a treat that is good for you but also actually delicious! These are so easy to make, they can be whipped up in a breeze when you have unexpected guests.

INGREDIENTS

1 cup flaked almonds

1⁄2 cup Pepitas (green pumpkin seeds)

3 Tb Sunflower seeds

2 Tb Black Sesame seeds (white works too!)

2 Tb Chia seeds

3 Tb Honey

 

METHOD

Step one.
Preheat the oven to 160°C (fan forced).

Step two.
Add all the dry ingredients in a bowl, stir gently to combine - being careful not to break the almonds as you mix.

Step three.
Add the honey. Gently combine until everything is covered with honey.

Step four.
Prepare a baking tray with baking paper. Using a round cookie cutter, press a generous tablespoon of the mixture into the cookie cutter, to give you perfectly round florentines.

Step five.
Bake for 15 minutes, or until a beautiful carmel-brown colour. Leave to cool before moving from the tray (the florentine will bind together once cooled). Serve drizzled with extra honey for that extra antioxidant boost.
