Honey Banana Museli Bars

Delicious, healthy and very moreish! Easy to make and even easier to eat. These are a great option for batch baking to ensure you always have a healthy snack to hand.

INGREDIENTS

80g coconut oil (melted)

2 ripe bananas (mashed)

3 Tb peanut butter

40g honey (daily range is best)

300g rolled oats

40g desiccated coconut

70g sultanas


METHOD

Step one.
Preheat oven to 180°C. Prepare a brownie tin (or any square/rectangle dish) by lining it with baking paper.

Step two.
In a large bowl add coconut oil, mashed bananas, peanut butter, honey and coconut oil, oats, desicated coconut and sultanas. Mix until well combined.

Step three.
Press the mixture into the tin so that the mixture is level in the tin and reasonably compressed.

Step four.
Bake in the oven for 15-20 minutes, or until the edges become golden. Remove from the oven. The middle may still be soft but this will firm as it cools. Leave for 10minutes before turning out.

Step five.
Turn out onto a chopping board and cut into museli bar shapes. Leave to cool completely on wire rack. Store in an airtight container for up to 5 days - or they freeze great too!
